- 2 cups of quinoa
- 1 cup of vegetable broth
- 1 cup of cranberries
- 1 cup of diced carrots
- 1 cup of chopped kale
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of thyme
Anweisungen
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add carrots and cook for 5 minutes.
- Add kale, cranberries, salt, pepper, and thyme. Stir for 3 minutes.
- Fluff the quinoa and combine it with the vegetable mix.
- Serve warm.
