- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1 cup diced sweet potatoes
- 1/2 cup cranberries
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Anweisungen
- Preheat the oven to 400°F (200°C).
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil. Add quinoa, cover, and simmer for 15 minutes.
- Meanwhile, toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast sweet potatoes for 25 minutes until tender.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, kale, cranberries, and walnuts.
- Toss to combine and serve warm.

- Substitute vegetables as desired.
- Adjust seasoning to your taste.
- Can be made ahead and served chilled.
