  • 1 cup diced sweet potatoes
  • 1 cup chopped kale
  • 1/2 cup cranberries
  • 1/4 cup pecans, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Anweisungen

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. On a baking sheet, toss sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Bake for 25-30 minutes until tender.
  5. In a large bowl, combine cooked quinoa, chickpeas, kale, cranberries, and pecans.
