Zutaten

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 cup of chopped onion
  • 1 can of chickpeas, drained and rinsed
  • 1 cup of chopped cranberries
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • Salt and pepper to taste

Anweisungen

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a large skillet, sauté carrots, celery, and onion until soft.
  5. Add chickpeas, cranberries, thyme, rosemary, salt, and pepper.
  6. Combine the sautéed vegetables with quinoa.
  7. Serve warm.
