A delicious vegan meal to celebrate Thanksgiving.
Zutaten
Skala
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 cup of chopped onion
- 1 can of chickpeas, drained and rinsed
- 1 cup of chopped cranberries
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- Salt and pepper to taste
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a large skillet, sauté carrots, celery, and onion until soft.
- Add chickpeas, cranberries, thyme, rosemary, salt, and pepper.
- Combine the sautéed vegetables with quinoa.
- Serve warm.
Notes
- This dish can be made a day in advance.
- Store leftovers in an airtight container in the fridge.
