  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Anweisungen

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and cover.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. In a large bowl, combine black beans, corn, red bell pepper, and avocado.
  6. Mix in cooked quinoa.
  7. Drizzle with lime juice and olive oil.
  8. Add cumin, salt, and pepper. Toss to combine.
  9. Serve chilled or at room temperature.
