A complete vegan Thanksgiving dinner with delicious plant-based dishes.
Zutaten

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until liquid is absorbed.
- In a large bowl, combine black beans, corn, red bell pepper, and avocado.
- Mix in cooked quinoa.
- Drizzle with lime juice and olive oil.
- Add cumin, salt, and pepper. Toss to combine.
- Serve chilled or at room temperature.
Notes
- Can add other vegetables as desired.
- Best served fresh.
