- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced sweet potatoes
- 1 cup green beans, trimmed
- 1 cup chopped mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1/4 cup olive oil
Anweisungen
- Preheat your oven to 400°F (200°C).
- Rinse quinoa under cold water.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While quinoa cooks, toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until translucent.
- Add mushrooms, green beans, thyme, and rosemary. Sauté for 5-7 minutes.
- Combine roasted sweet potatoes, sautéed vegetables, and quinoa in a large bowl.
- Season with salt and pepper to taste. Serve warm.
Notes
- Feel free to add other vegetables.
- Can be made a day ahead and reheated.
