- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced

Anweisungen
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa, reduce heat, cover, and simmer for 15 minutes.
- In a skillet, sauté onion and garlic until translucent.
- Add bell pepper, black beans, cumin, and paprika. Cook for 5 minutes.
- Combine quinoa with the vegetable mixture.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
