A delicious vegan alternative to traditional turkey for Thanksgiving.
Zutaten
Skala
- 1 large cauliflower
- 2 cups cooked quinoa
- 1 cup walnuts, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon thyme
- 1 tablespoon rosemary
- 1 tablespoon sage
- Salt and pepper to taste
Anweisungen
- Preheat your oven to 375°F (190°C).
- Cut the cauliflower into a turkey shape and place it on a baking sheet.
- In a pan, heat olive oil and sauté onion, garlic, carrots, and celery until soft.
- Add cooked quinoa, walnuts, soy sauce, and herbs to the pan. Mix well.
- Stuff the cauliflower with the quinoa mixture.
- Cover the cauliflower with foil and bake for 30 minutes.
- Remove the foil and bake for another 15 minutes until golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
- Serve with vegan gravy.
- Can be prepared a day in advance and reheated.
- Adjust spices according to your taste.
