Zutaten

  • 1 large cauliflower
  • 2 cups cooked quinoa
  • 1 cup walnuts, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 1 tablespoon sage
  • Salt and pepper to taste

Anweisungen

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cauliflower into a turkey shape and place it on a baking sheet.
  3. In a pan, heat olive oil and sauté onion, garlic, carrots, and celery until soft.
  4. Add cooked quinoa, walnuts, soy sauce, and herbs to the pan. Mix well.
  5. Stuff the cauliflower with the quinoa mixture.
  6. Cover the cauliflower with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 15 minutes until golden brown.
  8. Let it cool for a few minutes before slicing and serving.

Notes

  • Serve with vegan gravy.
  • Can be prepared a day in advance and reheated.
