Zutaten

- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 cup of quinoa
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Anweisungen
- Preheat the oven to 375°F (190°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and 2 cups of water. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until water is absorbed.
- In a pan, heat olive oil and sauté garlic and mixed vegetables until tender.
- Add cooked quinoa, thyme, salt, and pepper to the vegetable mixture.
- Transfer to a baking dish and bake for 20 minutes.
- Garnish with fresh parsley before serving.

- This recipe serves 4 people.
