Zutaten

  • 2 cups of mixed vegetables (carrots, peas, corn)
  • 1 cup of quinoa
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Anweisungen

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and 2 cups of water. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes, or until water is absorbed.
  5. In a pan, heat olive oil and sauté garlic and mixed vegetables until tender.
  6. Add cooked quinoa, thyme, salt, and pepper to the vegetable mixture.
  7. Transfer to a baking dish and bake for 20 minutes.
  8. Garnish with fresh parsley before serving.
