Zutaten

  • 2 cups quinoa
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • Salt to taste
  • Pepper to taste

Anweisungen

  1. Rinse the quinoa under cold water.
  2. Cook the quinoa in a pot with double the amount of water. Bring to a boil, then simmer for 15 minutes.
  3. Let the quinoa cool.
  4. In a large bowl, combine cherry tomatoes, bell pepper, cucumber, black beans, and avocado.
  5. Add the cooled quinoa to the bowl.
  6. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  7. Pour the dressing over the salad and mix well.
  8. Serve chilled or at room temperature.
