A vegetarian dinner ideal for New Year’s Eve celebrations.
Zutaten

- 2 cups quinoa
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 can black beans, drained and rinsed
- 1 avocado, diced
- 1/4 cup olive oil
- 1/4 cup lime juice
- Salt to taste
- Pepper to taste
Anweisungen
- Rinse the quinoa under cold water.
- Cook the quinoa in a pot with double the amount of water. Bring to a boil, then simmer for 15 minutes.
- Let the quinoa cool.
- In a large bowl, combine cherry tomatoes, bell pepper, cucumber, black beans, and avocado.
- Add the cooled quinoa to the bowl.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Serve chilled or at room temperature.

- This dish can be made a day in advance.
- Feel free to add your favorite vegetables.
