- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of diced bell peppers
- 1 cup of chopped spinach
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add carrots and bell peppers. Sauté for 5 minutes.
- Add spinach, garlic powder, onion powder, salt, and pepper. Cook for another 3 minutes.
- Fluff quinoa with a fork and mix in sautéed vegetables.
- Drizzle with lemon juice before serving.
Notes
- This dish can be served warm or at room temperature.
- You can add nuts for extra crunch.
