- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup corn
- 1 teaspoon cumin
- Salt and pepper to taste
Anweisungen
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper, zucchini, and corn. Cook for 5-7 minutes.
- Stir in cooked quinoa and cumin. Season with salt and pepper.
- Serve warm as a side dish.

- This dish can be made ahead of time.
- Store leftovers in the fridge for up to 3 days.
