- 2 cups vegetable broth

Anweisungen
- Preheat your oven to 400°F (200°C).
- In a pot, bring vegetable broth to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
- On a baking sheet, toss green beans and cherry tomatoes with olive oil, garlic powder, onion powder, salt, and pepper.
- Roast vegetables for 20 minutes until tender.
- Fluff the quinoa with a fork and mix in the roasted vegetables.
- Garnish with fresh parsley before serving.
