Zutaten

  • 1 large butternut squash, halved and seeded
  • 2 cups quinoa, rinsed
  • 4 cups vegetable broth
  • 1 cup cranberries, dried
  • 1 cup pecans, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1 tablespoon maple syrup

Anweisungen

  1. Preheat the oven to 400°F (200°C).
  2. Place the butternut squash halves cut-side down on a baking sheet.
  3. Bake for 30-40 minutes until tender.
  4. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Fluff quinoa with a fork and mix in cranberries, pecans, olive oil, salt, pepper, cinnamon, and maple syrup.
  7. Once squash is done, scoop out some flesh to make room for the filling.
  8. Stuff the squash with the quinoa mixture.
  9. Return to the oven and bake for an additional 10 minutes.
  10. Serve warm.
