  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Anweisungen

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat. Simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add bell pepper, corn, beans, cumin, chili powder, salt, and pepper. Cook for 5 minutes.
  7. Fluff quinoa and mix with the vegetable mixture.
  8. Garnish with cilantro and serve.
