- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup corn
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Anweisungen
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat. Simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper, corn, beans, cumin, chili powder, salt, and pepper. Cook for 5 minutes.
- Fluff quinoa and mix with the vegetable mixture.
- Garnish with cilantro and serve.

- This recipe serves 4-6 people.
- You can add other vegetables as desired.
- Can be made ahead of time and reheated.
