  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Anweisungen

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef in batches, removing it once it’s browned.
  3. Add onions and garlic to the pot, cooking until soft.
  4. Stir in tomato paste, thyme, and bay leaf.
  5. Add beef back to the pot along with broth, potatoes, and carrots.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Season with salt and pepper before serving.

Notes

  • For thicker stew, mix a tablespoon of cornstarch with cold water and add during the last 10 minutes of cooking.
