Zutaten
- Quinoa – 1 cup
- Black beans – 1 can
- Bell peppers – 2, diced
- Tomatoes – 2, chopped
- Onion – 1, chopped
- Garlic – 2 cloves, minced
- Spinach – 2 cups
- Olive oil – 2 tablespoons
- Lemon juice – 1 tablespoon
- Salt – to taste
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and 2 cups of water. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until water is absorbed.
- In a skillet, heat olive oil. Add onions and garlic, sauté until fragrant.
- Add bell peppers and tomatoes, cook for 5 minutes.
- Add black beans and spinach, stir until spinach wilts.
- Season with salt and lemon juice.
- Serve the vegetable mixture over quinoa.
