- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Anweisungen
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
- In a large bowl, combine black beans, red bell pepper, avocado, and cilantro.
- Add cooked quinoa to the bowl.
- Drizzle lime juice and sprinkle cumin, salt, and pepper. Mix well.
- Serve chilled or at room temperature.
