- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup whipped cream for topping
Anweisungen
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Line a muffin tin with cupcake liners and fill each liner about two-thirds full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool before topping with whipped cream.
Notes
- Store leftovers in an airtight container.
- These cupcakes can be made ahead of time.
- Try adding chocolate chips for extra flavor.
