Lobster bisque is a rich and creamy soup made with lobster, vegetables, and spices.
Zutaten

- 2 lobsters (about 1.5 lbs each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Anweisungen
- Cook lobsters in boiling water for 8-10 minutes. Remove and let cool.
- In a pot, sauté onion, carrots, celery, and garlic until soft.
- Add brandy and tomato paste. Cook for 2 minutes.
- Add seafood stock and thyme. Simmer for 20 minutes.
- Remove lobster meat from shells and chop into pieces.
- Add lobster meat to the pot. Stir in heavy cream.
- Season with salt and pepper. Heat through.
- Blend the soup until smooth if desired. Serve hot.
