- 2 lobsters, cooked and shelled
- 4 cups lobster stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
Anweisungen
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in tomato paste and paprika.
- Pour in brandy and cook until reduced.
- Add lobster stock and bring to a boil.
- Simmer for 20 minutes.
- Add cream and lobster meat, heating through.
- Season with salt and pepper.
- Blend until smooth if desired.
- Serve hot.
