Lobster empanadas are a delicious seafood dish filled with tender lobster meat.

- 1 pound lobster meat, cooked and chopped
- 1/2 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 2 cups empanada dough
- 1 egg, beaten (for egg wash)
Anweisungen
- Preheat your oven to 375°F (190°C).
- In a skillet, sauté onion, bell pepper, and garlic until soft.
- Add lobster meat, paprika, cayenne, cilantro, and lime juice. Stir to combine.
- Roll out empanada dough and cut into circles.
- Place a spoonful of the lobster mixture in the center of each circle.
- Fold the dough over and seal the edges by pressing with a fork.
- Brush the tops with beaten egg.
- Bake for 25-30 minutes until golden brown.
