Zutaten

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Anweisungen

  1. In a saucepan, bring water to a boil.
  2. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  3. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  5. Add cooked quinoa to the bowl.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
