- 1 lb beef tenderloin

- 2 cloves garlic, minced

- 1 tbsp fresh rosemary, chopped
- 1 lb asparagus, trimmed
- 1 lb baby potatoes, halved
- 1 tbsp butter
Anweisungen
- Preheat the oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, salt, pepper, and rosemary.
- Place the tenderloin on a baking sheet.
- In a separate bowl, toss asparagus and baby potatoes with olive oil, salt, and pepper.
- Arrange the asparagus and potatoes around the beef on the baking sheet.
- Bake for 25-30 minutes or until the beef reaches desired doneness.
- Remove from oven, let rest for 10 minutes, then slice.
- Melt butter and drizzle over vegetables before serving.
