  • 2 celery stalks, diced

  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup green beans, chopped
  • 1 cup corn, frozen or fresh
  • 1 cup peas, frozen or fresh

Anweisungen

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for another minute.
  4. Add vegetable broth, diced tomatoes, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add green beans, corn, and peas. Cook for an additional 10 minutes.
