- 2 cups quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh parsley, chopped
Anweisungen
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine cherry tomatoes, cucumber, and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Once quinoa is cooked, let it cool and then add to the vegetable mixture.
- Pour dressing over the salad and mix well.
- Garnish with parsley before serving.
