- 1 lb of chicken breast
- 2 cups of broccoli
- 1 cup of cherry tomatoes

- Salt and pepper to taste
- 1 cup of quinoa
- 2 cups of vegetable broth
Anweisungen
- Preheat the oven to 400°F.
- Season the chicken with garlic powder, salt, and pepper.
- In a skillet, heat olive oil over medium heat and cook the chicken until golden brown.
- Add broccoli and cherry tomatoes to the skillet and sauté for 5 minutes.
- In a separate pot, bring vegetable broth to a boil and add quinoa.
- Cover and simmer for 15 minutes or until quinoa is fluffy.
- Serve the chicken and vegetables over a bed of quinoa.
