- 2 chicken breasts, boneless and skinless
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups vegetable broth
- Fresh basil for garnish
Anweisungen
- Preheat the oven to 400°F (200°C).
- Season chicken breasts with garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Sear chicken breasts for 3-4 minutes on each side.
- Transfer chicken to a baking dish and add cherry tomatoes.
- Bake for 20 minutes or until chicken is cooked through.
- Meanwhile, rinse quinoa and cook it in vegetable broth according to package instructions.
- Fluff quinoa and serve with chicken and tomatoes.
- Garnish with fresh basil before serving.
Notes
- Use a meat thermometer to check chicken doneness.
- Quinoa can be substituted with rice if preferred.
